Gas griddles 
Gas griddles are heated by gas burners that sit directly under the griddle plate and heat the
cooking surface. Any cooking equipment that involves gas always requires professional
installation and griddles are no exception. Installation typically comes at a cost, but it may
become more expensive if a gas line needs to be installed or moved to accommodate your
kitchen layout. This type of griddle is often less accurate however they typically heat faster and
can change temperature quicker than electric griddles.
Electric griddles
Electric griddles are made with a heating element built directly into the griddle plate. Unlike gas
griddles they don’t always require professional installation and are generally considered more
energy efficient. While electric griddles don't heat as quickly as their gas counterparts, they are
often more precise in terms of temperatures. This can be especially beneficial if your kitchen
prepares a lot of temperamental dishes that require more precision when cooking. 
Which is better for you? 
Electric and gas-powered griddles are both effective cooking tools to have in your kitchen, but
they have their own unique benefits. If you are looking for an easier installation process and
better energy efficiency, then an electric griddle may be a better fit for your kitchen. However, if
speedy order fulfillment is a concern for your business, a gas griddle might be best because of
their ability to heat up and change temperature quickly.
