Using a deep fryer safely

Deep fried foods are always popular but making them comes with some safety concerns. The following safety tips will help you protect your workers and your business.

• Never leave a deep fryer unattended when in use.

• Do not overcrowd the fryer baskets.

• Do not overfill the fryer with oil.

• Do not add food to the basket when the basket is submerged.

• Make sure there is a fire extinguisher near the deep fryer area and that everyone knows where it is and how to use it.

• Avoid putting wet food or food with excess water into hot oil.

• Switch oil regularly. Old, dirty oil creates more smoke and can ignite easier.

• Have the fryer regularly cleaned and professionally maintained.

• Make sure everyone that works around the fryer is well trained to safely use the equipment.

• Lower baskets into the oil slowly, don’t dunk it quickly.

• Make sure to prohibit drinks and other liquids from the deep-frying area.

Apart from safety tips for using the deep fryer, there are some general safety recommendations your kitchen should have in place.

Footwear:

Everyone in your kitchen should have non-slip, closed-toes shoes. Even a small splash or oil splatter can create an injury if your feet are not appropriately covered.

Floor mats:

Having commercial floor mats can prevent slips, especially around pieces of equipment like fryers where oil and splashes can create hazardous conditions.

Safety equipment:

Make sure to have appropriate hand protection and an appropriately rated fire extinguisher nearby.

Cleaning:

Maintain safety protocols for cleaning your fryer and do it on a regular basis. Ensure cleaning and upkeep is done when the fryer is completely cool, like in the morning prior to business. Create a cleaning checklist, train everyone on proper procedures and periodically have professional service do a deep clean for you.

Finally, it is critical that everyone in your kitchen is well trained in how to use all equipment properly, including your deep fryer. By simply ensuring that your staff understands how to effectively use everything they need to, including the inherent dangers, you will limit the chances of something going wrong.
